OK, after dry-brining followed by a rinse and a dry-rub... Here they sit, waiting for grill time:


And a few hours later, loaded up on the MES 40 (2nd gen) set for 230...  Going for 2-2-1 based on the many threads I've read here... We'll see how they work :-)

OK... the 'done' photos didn't work, but the ribs (and baked beans) were AMAZING...  Thanks to all of your great tips, my first ever time smoking ribs was a total win.
