Having a party for my Grandson next Sunday and plan to smoke 4 slabs of spare ribs. This will be the first ribs cooked in my SI 3. I'll prep them the night before but like others, temp. swings have been noticed during seasoning and a meat loaf I smoked. I figure it should be a 6-7 hours to smoke. If you have any other ideas I could use them. Thanks
 
6-7 hours at what temp? I just did a rack of baby-backs this past weekend and unfortunately they came out a little too dry. I did ~2-2-1 @225. The last hour really was more like half an hour, and I should have just pulled them after the 2 hours foiled. A learning experience for next time, but they still tasted pretty good with the rub I put on them.
 
 
Thanks, I was planning to use 3-2-1 for the ribs... Yes I plan to run them at 225 so after the first 3 hours I'll maybe use foil for only 1 hour then spritz them for the last hour.

My guess is that spares would need the extra time since they're bigger than baby backs, but someone who's not a complete noob should confirm that :) I spritzed the babies as I foiled them, but didn't put the probe in assuming that they would still need that extra hour at the end and I'd just probe them then. When I took them out of the foil they were at 190-195 at which point I should have pulled them, instead I stuck to the 2-2-1 plan. There's always next time!
 
 
Thank you for the info... I'll be making spare ribs so I'm thinking 6-7 hours is probably to long. I'll plan for 5-6 hours with time available for finishing them if not tender.
