My last crack at ribs came at the end of last summer on my propane smoker. Didn’t cook em long enough so they were a bit chewy but still flavorful kinda. Anyhow the wife was suspect when I fired up the new charcoal smoker (Cuisinart) this morning.

St. Louis style for 6.5 hours at 230-240. I went 3-1-2.5 (??) because I was worried about ending up with mushy ribs. Served them with a vinegar and ketchup based dipping sauce. Delicious. Next time I think I need to go a bit heavier on the seasoning.

Two smokes down on this thing and after adding LavaLock around the door it is steady. I think I need a bigger charcoal ring for it but so far so good.


 
Those ribs looks great! Points for sure. Hope you had some cold beers to wash em down with.

I didn't even know Cuisinart made smokers. Glad you are enjoying it so far.
 
Thanks! I went with the Cuisinart bc of price honestly. Now I’m hooked and will get a higher end model in a few years.
