I would say cooking at 225 it will take approximately 4 hours give or take. Cook time will also depend on whether you are going for R, MR, M, or burnt I mean Well Done.

Don't forget to let it rest after cooking so allow at least 1/2 hour for that.

Thanks..bout what I thought.

I may cook it a little lower, for longer, and ive been asked to go for medium..but I like the idea of faking out MR by soaking in the Vman soy sauce based marinade for a few days..less pink from the coloring.

;)
 
Does anybody pan or grill sear it first, or don't bother? Will it still take smoke as easy if seared first? Or sear it after smoking?
