Started out with an 11lb four bone in Prime Rib. Made up a mixture of cubed butter, kosher salt, cracked pepper, onion powder and garlic powder. Mixed contents and coated the prime rib. Scored the fat cap and cut small openings big enough to insert garlic cloves just beneath the fat. Placed in pan and added beef broth. Applied rosemary and thyme allowing the extra to fall in the broth. Got my Weber going to about 450-500 and placed pan over direct to get a decent sear. Left it on for about 25 minutes. While that was cooking I made another pan with broth, garlic cloves and onion and placed in smoker with my cooking grate over the top. Smoker is at 220 at Bears recommendation and holding steady.
