Here's my first post to this great forum. I smoked a 7.5lb bone in butt on my new Weber charcoal grill and it turned out great! I also did my take on the "Big ol mess", and some baked beans.

I rubbed the butt down with Famous Dave's BBQ rub the night before and put it in the fridge to chill. Got up at 4:30am the next morning and fired up the Weber. By 5:30am the fire was ready(a little hot 300-325deg for my taste but I figured once I put the meat on it would lower the temp). BTW, I ended up fighting the high temps all day, I tried closing the bottom vent to lower the temp but I almost snuffed the fire out. So I ended up with temps around 275-300deg all day. 

I sprayed Apple juice on the butt every time I added charcoal and I rotated the butt a couple of times too. I also smoked it with the

fat side up.

Where's the Money Shot!  The pic you have has potential but doesn't make me hungry.
