First pork butt - dang it's early!

Woke up real early this morning to get my first ever pork butt on. 7.8# pre trimmed, around 7 after removing much of the fat cap. Rubbed with mustard and Killer Hogs/Pork Barrel BBQ rub (Costco find). Going on with a mix of hickory and apple. Stay tuned!
 
Well we've officially hit the stall. Sitting at 167 IT for the past 30 minutes. Cranked her up to 250 and hoping to power through! What's your opinion on shutting smoke down after 6ish hours/ 160IT?
 
I stop adding wood after it hits about 150 IT. It's not going to take any smoke after that and you risk having a bitter bark if you over-smoke it.
