Been several years since I’ve done trout. First time in new Pit Boss Lexington. Brined 8hrs, dried in fridge overnight. Outside temp a sweltering 14 degrees here in PA. 6 inch smoke tube with hickory, prefer alder but my stock isn’t built. Just in trying to maintain heat below 225. 4 fish, try to follow up with pics.

Well, here are some pics. Tough smoke today. Smoke tube fail ( my fault). Fight Mother Nature for temperature control. Made it thru. Lost old brine recipe. Starting over.

Nice bud i don't eat anything that lives in the water but that looks outstanding. I love those grill mats btw I use a cheaper version but I have used em for god knows how many differant things
