First Official smoke in the Mini-WSM!!! (Drool view!!!)

Normally I do prime rib during the holidays, but this year it just hasn't happened quite yet. And its not going to happen till the weekend. I really wanted to get my first smoke under my belt on the Mini-WSM so these will have to do tonight. I hope all goes well, currently it's only 26* brrrrrr!!!



Into a Worcestershire Bath for a few hours prior to a SPOG massage! I plan on getting the Mini-WSM fired up in a few hours, gonna be using cherry and hickory for smoke tonight.
 
I have been dying to make a mini wsm.  i am looking forward to seeing your results!
Finding a Smokey Joe on Craigslist sealed the deal on building one for me!!! I had to order the tamale pot as even the Hispanic Grocery store here didn't even carry them. I just made a modification today adding two rubber grommets so I can stick the therm probes in. All total I'm into this for less than $40.00!!!

Using a 12" saucer as a diffuser on the bottom rack tonight. All of this is in the house now warming up, its currently 24*F outside!!! I just realized my torch is at the fiances house!!! Hmmm going to have to use the side burner on the bbq to get the charcoal going!!!
 
Okay here is the final results of the first smoke in the Mini-WSM. Once again a very COLD!!!!

smoke, no wind though!!!! So here is the smoke log for tonight.


Seasoned and ready to go! SPPG tonight. Didn't have onion powder so substituted paprika!

4:00 lit the chimney, torch was at the fiancé  house so I had to resort to using the side burner on the backup BBQ. It was so cold that on high the burner was less than on low. So I crumpled newspaper and stuffed it in the chimney to get it going


4:30pm  22*F Outside temp (from here forward OT) Dumped the Briquettes in the Mini-WSM Smoker temp will be ST


Blowing ugly smoke!!! I've found it needs to hit 265 or so then it clears up.

5:00 PM 19.4*F OT - Hit 300F* ST closed Bottom vent 1/2 way

5:15 PM 17.9*F OT - 290F* ST added wood chips

5:30 PM 17*F OT -  Put steaks on temp dropped to 198F*ST TBS  opened bottom vent

5:35 PM 16.8F* OT - 217F*  ST

5:40 PM 16.4*F OT - 234* ST

5:55 PM 14.7*F OT - 247 ST Steaks @ 98* bottom vent wide open

6:20 PM 14.0*F OT - 271* ST Steaks @ 125*

6:35 PM 13.8*F OT - Steaks pulled!!


I wanted to see how the temps held so here's the after food temps.

7:15 PM 13*F OT - 277 ST

7:30 PM 12*F OT - 274 ST

7:45 PM 10* OT- 270 ST Too F-ing cold all done with this!!!

Couldn't finish the tater skin so I cut up some of the fatty parts and gave it to Snow Dog!!

They sure did taste good!!! I forgot how good a streak is when its not cooked on a gas grill!!!

Looks like your temp was holding good too.
I had better temp control for sure this go around! I can't wait to try it when the outdoor temps are better!!! This smoking at 20* and less sucks!!! I don't think I could have done a long smoke, I'm sure the fuel was being used up fast. I didn't have my ash cover for the vent either.

We'd be more than happy to send you some snow and the cold weather, was 5* this morning!!! We have friends in Birmingham, I'm not to sure they'd appreciate the weather!!!
 
Great job with the Mini WSM....Those steaks look like they turned out Fantastic!!! I've been doing a lot of indirect smoking on my 22 inch weber kettle and i love it. I have most of the parts gathered for a mini WSM and i just have to take the time to assemble it.

I'm looking forward to smoking some larger cuts here soon. I'm going to need to let the weather warm up a bit more. I also want to use lump. I was only using the briquettes as they came with the Smokey Joe when I bought it off Craigslist. Now that they are gone I can dig into the Lump! If things warm up this weekend I think injected hot wings will be in order!
