How about raw Goat milk Ghost pepper chedder, from scratch? Here 1/2 a wheel I made in may of 2018.

As you'll notice I'm a little heavy handed on the Ghost pepper.

I have a full tutorial on making your own cheddar at home. Then add in the peppers of you choosing right before pressing. 3 gallons of whole milk will generate about 1-1/2 pound wheel of cheese.
