First home made smoker project

Hi folks, I'm a U.K. based BBQ and smoker enthusiast and I've decided to build a gas smoker.

I have a good idea what I want to build and have made several adjustments to my plans along the way.

Basically I have a 100 litre stainless steel beer barrel and my smoker will be propane powered. The question I have is this.

Can anyone recommend a burner that won't be too big or too small to keep a constant temperature? The burner will sit in the bottom of the barrel with a vent nearby and a 10cm flue at the top of the barrel which will also have an adjustable vent at the top.

I have considered a paella burner but the varying sizes and power outputs are causing me quite a dilemma.

Any help or advice would be great.
