Finished the smoker and finally able to throw some meats on that bad boy. I started off with some lollipop chicken 2 weekends ago and last weekend I did 2 racks of ribs, 2 pork loins and some bacon wrapped jalapeños. Chicken turned out to be the best chicken I’ve ever cooked. Shout out to SmokinAL! I followed his rib recipe and basically not cooking with time but cooking for the set temp and they turned out amazing. The pork loins I dry rubbed and let set in the fridge overnight, cooked them to 145 and were extremely tender, cooked for about an hour and a half. Bacon wrapped jalapeños are always a hit! I also give a shout out to Inkbird on their wireless Bluetooth set up that I used. You ever get a chance to check that out you should, if needed I can give the info on that unit.

Good looking good for sure! I use SmokinAl’s method for ribs also, makes it easy to get consistent results.

Appreciate it, his method makes sense to me although I will try others, his will be my go to.
