First Few Pizzas

My wife enjoys making pizza, so got her a pizza oven for Mother’s Day. First couple of pies here. Did a poolish dough yesterday - that is the way for sure.

They’re a lot of fun, and the oven cooks up a pizza in about a minute!

These are all my wife’s work.



Pepperoni

Carnitas pizza, because we ran out of pepperoni and still had dough!

And boring cheese for the kids

Boring cheese ? My Son makes cheese pizza that's killer . I never would have thought that possible . He manages the dairy department at a local grocery . He has the vender bring him some awesome cheese that he grates up for his pizza . Plus the pecorino is killer .
Good dough , and quality ingredients .

If you can't make good cheese pizza, you are not a pizza chef. Cheese pizza is the test of a cook's skills.

When I go to a new place, I always order cheese pizza. Any idiot can pile toppings on dough and hide a pizza's flaws. If it's good without toppings, you know the chef knows what he's doing.
