First butt for pp

    Doing my first pp, using emans pig rub.

    Going to smoke at 250 in my mes.

    Going to foil at 150 and take to IT of 205.

    Going to start it at 4 am tomorrow.

    All help and opinions welcome.

    Ar-kansas the beer would be mule pee...here in the Midwest it's usually a lager, ale or my favorite....IPA!!!

    Should I put it in a pan or not, in the smoker.

    Never in the pan...pan below the rack is ok.

    When you start with the UDS just let the fat drip in the fire.

    Went to get a shoulder and they were out of them.

    About 16 hrs right?

     2 hrs per lb?
     
  20. That depends on your cooker temp.  If cooking at 225* 2 hr/lb will be about right.  If higher you'll have less time.
