Me too! I used to smoke salmon on the kettle with two vents closed, one open a crack, four pieces of Kingsford and apple chunks, came out great. RAY


Sounds like how I do cheese on the WSM. I still find myself bending the fins on the one-touch system when I scrap my kettle.

I used to smoke cheese on my SQ36 offset, sold it last fall. I'm going to try smoking some cheese this winter on my 26er, always too hot here until then. RAY
