First Brisket

  1. I am smoking my first brisket for the 4th. I have a Masterbuilt electric smoker. I bought a 8# packer and it don't fit on my racks. Can I cut part of it off and which end should I cut. Thanks for any help.

    If you separate the point from the flat it will give you a few more inches.

    And if you're wonder what they're talking about or how it can be done, I trimmed and separated a packer for a smoke on my brinkmann gourmet awhile back (15.5" grates)...HERE

    Hmm...I just looked at that thread again...did burnt ends from the point, sliced flat and smoked beans with bacon, also.

    btw, both are kinda lengthy posts...lotsa pics and step-by-seps, so enjoy!

    You can lay the flat and point cuts diagonally in smaller vertical smokers and they'll fit nicely if it's not a monster...well, let me say up to about 14lb (pre-trim/separation) should work.
