Been smoking for about 10 years but for whatever reason just got around to a brisket. 15 lb prime packer from Costco. Used Jeff’s Texas rub and also injected with some Au Jus. Separated the flat and point, cooked on a Rec Tec at 225. Removed around 4 lbs of fat. When point hit 190 I chopped it up and into a pan with a little more rub and a bit of sauce to make Burnt Ends. Wrapped the flat and stuck in the oven at 350 while the burnt ends continued on the smoker. Used my 4 probe inkbird for the first time, the app was very handy for an overnight cook. I learned a ton being my first brisket, and I think it turned out really well considering it was my first brisket. Some Q view below, had a few too many Guinness, if there is such a thing, so forgot he burnt end picks but they were excellent.
