Yeah I think the guys nailed it.
I pull, wrap in double foil and then wrap in 3 bath towels and it is still good and hot 4-5 hours later. I can only imagine how hot a cooler keeps it.
Also foiling the brisket in the smoker just speeds things up in the cooking and tenderness process as well.
So it seems you had this synergy of foiled in smoker, wrapped with a towel, put in a cooler, and kept super hot for like 6 hours to get to your "over cooked" fall apart state.
Get you some real tortillas (or make some), some limes, pico, etc. and use all that shredded meat to make AMAZING brisket tacos that you squeeze lime on as you eat. I always add a little bit of bbq sauce as well and man I'm in brisket taco heaven! :)
