First brisket - was not what I expected...

Yeah I think the guys nailed it.

I pull, wrap in double foil and then wrap in 3 bath towels and it is still good and hot 4-5 hours later. I can only imagine how hot a cooler keeps it.

Also foiling the brisket in the smoker just speeds things up in the cooking and tenderness process as well.

So it seems you had this synergy of foiled in smoker, wrapped with a towel, put in a cooler, and kept super hot for like 6 hours to get to your "over cooked" fall apart state.

Get you some real tortillas (or make some), some limes, pico, etc. and use all that shredded meat to make AMAZING brisket tacos that you squeeze lime on as you eat. I always add a little bit of bbq sauce as well and man I'm in brisket taco heaven! :)

I tell you what. That there is some fine looking grub. Even though sliced brisket is nice and pretty, I'm with everyone else, I prefer mine chopped or pulled with bbq sauce. Makes a better sandwich to me.
 
That was a fine looking spread Poukiebear, and doing another for ahmmm practice is always a good idea lol. Good on you. Lots of good advice here, another thing you may consider is to keep a log/book on your smokes to keep notes and look back on, I don't always but when I do I usually find where I could have changed things to make things better. I always find you are your own worst critic. Lol that's what I always get told. Like on your cook and meal.
