Planned a small party this past Saturday. I already had the food decided on and was going to try and smoke a pork butt for pulled pork. I had enough backup food since this was going to be my first long smoke on the Oklahoma Joe's offset and wasn't sure how it would turn out. While at Walmart getting some supplies the day before, I came across their briskets and they had a smaller 11lb for $40. And it dawned on me that if I'm gonna be smoking all day anyway, now is the time to test out my skills on a smaller brisket. And I won't have to stress about how it turns out.
So I picked her up and tried to follow Aaron Franklin's instructions in his book around fire management and Texas style (salt/pepper rub) and started to smoke both the pork and the brisket at 4am. Smoked them both for around 12 hours total. Wrapped them both around 6 hours in. And let them rest for 2 and a half hours.
Holy moly was it a long day but with buddies willing to come out early and help (a.k.a BS and drink) it made the day a great one.
It turns out that the brisket was absolutely amazing and super tender and just about perfect. It was inhaled as fast as I could slice it up and I had to stop everyone so I could get a picture of some slices haha. The pulled pork was also a huge success and the bone just fell right out.
Needless to say I'm very pumped about this cook and now feel addicted to wanting to throw parties just to give me a reason to smoke all day lol.
