Newbe here, but thanks to all you generous folks I did a Boston Butt last night (and this morning) and it turned out great. I put it in at 5:00 pm and it was finally done at 10:00 am. Pulled it at 205 degrees after 235 degrees in the smoker. (Was 7.5 lbs) I put the smoke (oak) to it for 4 hours and didn't wrap it until it was time to put it in the cooler. I've done beef roasts and ribs, but this was the first PP. But it won't be the last!!
