Okay, with the built in pan the can didn't seem necessary.

I brined the chicken 24 hour swith salt, sugar, whole allspice and bay leaves covered with rub, stuffed butter pats under skin. Drip pan has Shock Top beer, vinegar and Cajun seasoning.

Here's the finished bird:


It smoked for about 2 and a half hours at 275, I used apple and cherry chunks.

It came out really juicy and smokey, and the butter really made it yummy. I'll certainly make this again.

Looks gorgeous!! Cherry really gives a beautiful color and a wonderful sweet smoke to chicken.
