Not just on the egg, but my first attempt at the whole bacon wrapped thing.  Mom always told me, "it's not how it looks but how it tastes".  I don't know about you guys, but I'm betting it tastes pretty danged amazing.

Got it on the low and slow at about 225-230 with a little cherry and apple wood, taking it to a 140 IT.  Sound about right to everybody?

Not bad,,,not bad at all. Got a few left overs for some sandwiches tomorrow. I pulled it at 147 IT and let it rest for about 10 minutes. Tender and the juices just ran out of it. Thumbs Up :grilling_smilie:

That's was my original plan. But then I found out the in-laws where coming to dinner so I popped open another beer and let the meat go just a touch longer. It still turned out super juicy and cut with a fork tender. Everybody was good with the cook.
