Simple recipe on first cook. Salt,pink salt, brown sugar and pepper. Cured for 8 days then hot smoked until 147 degrees internal. Fried about 5 pieces and it turned out great. Not too salty and plenty of smoke flavor. Smoked on offset Chargriller Grand Champ XD wit oak and hickory. Wil definitely be doing it again in the future.
