Just smoked my first rack of baby back ribs on my MES 30" this past weekend.  Used a modified 2-2-1 (2-1.5-.75) method and smoked them around 230 for the first two steps and around 200 for the last hour.  I put some salt and a rub that I found hiding in my cabinet and let them sit overnight.

And the finished product:

Glazed them with some KC Masterpiece on the last step and they were delicious.

First off welcome Rob to SMF. Now your ribs look great and I bet that they will taste that good too. I'm really glad that you enjoyed them too. Now can you swing into Roll call and introduce yourself and your equipment too. is reader supported and as an Amazon Associate, we may earn commissions from qualifying purchases.
