Dude looks darn good from way down here in Mississippi. Like many others have said....After ya wrap in foil your just cooking. The bark and smoke flavor is there. Heat is heat. And when its as cold out as where you are, I'd rather be inside.

That looks fantastic. And the bark did look like it held up well. Now that you have completed the process you probably have a better understanding that it's really hard to describe what 'tender' is, how 'moistness' plays a factor, what pork actually feels like as you break down a butt, and most importantly how some muscles are more desirable than others.

Now, the quest continues because you can explore different rubs, maybe layers of rubs, and maybe injections.
