Tried some beef ribs, removing the membrane took a little extra effort and I missed some it seems. The smoke ring looked great, my rub (lightly applied) was nice but they seemed a little tough. Next up will be the Angus prime rib roast
 
I suggest braising beef ribs. They still look tasty,I found out after stealing one of my wife's as I wrapped hers she's not a big bark fan so once they get good color I wrapped hers in foil night a day difference. I don't normally wrap things.

I usually do them with the 3-2-1 method, that way they get real tender.

They do look real good....but like Al does, I also do the 3-2-1 method, they come out real tender.
 
Ribs look tasty! I too prefer to do a braise for beef ribs. If I don't braise I've found that cooking them hot n fast produces a better texture.
