Started at 9 it has been 3.5 hours and the IT according to my probe is 157. I plan on wrapping @ 165, and cook until 200. Does this sound like it will work out?
 
Sounds like a plan to me.

When it hits 200 check it in multiple places with a toothpick or wood skewer.

It should go in without any resistance.

If not keep cooking it.
