Firing Up Early

Putting a 6 # Butt on first thing in the morning.  Still torn between Hickory or Pecan for this one.  Probably gonna stick with Hickory as I always do....but may change....anyway...will post some of my first pics to the forum along the way tomorrow. - Using Horizontal Offset-Smoking at 250-finsihing in foil-  See ya Moro!!!

Try mixin it up with a bit of each, I did, tastes wicked good! Afterward, I spread it with a sweet n savory style bbq sauce (not too sweet though!) and it was good!

My choice for butt is always hickory.  Miss Linda prefers pecan.  I like the hickory as it gives a stronger smoke flavor.  I've also done a 50/50 mix of the two and it was good--just not as good, IMO.

Really struggled with the fire this morning for some reason. It was about 29 degrees when I started. Nevertheless its rolling a steady 250-255 now. I'm thinking of sticking with all hickory. This butt is a little different. My wife's grandfather got me started in smoking and shortly passed away afterwards. This butt will be enjoyed by his wife with us tonight. He used only hickory on his butts Also. I'm ising the last stick of hickory I have left of what he gave me. Sentimental I know, but very cool too!!
