357mag, I hear ya. A good friend of mine had a butcher shop back in So. Cal. so I was spoiled like a pig. Here in Nevada the stores are pre-packed enhanced and it's hard to find a good butcher shop that wont gouge ya. I've been going to the mexican markets lately, there prices are very cheap and the meat is good quality and they keep the place clean, no odors like you say even with the large fish and seafood case.
 
The briskets I've gotten at Sams have been Excel Choice.  I've been pretty happy with them.  Looking back, one of them was only $2.08/lb.
