After all the crazy hours I've worked, weather permitting I'm finally going to season my smoker ( OK JOE Highland ) tomorrow
I have several cans of Pam for the inside & WD40 for the outside
I have charcoal & several logs of oak, if there's anything you can think of let me know I'll check this forum in the morning when I get home from work
I got a water pan with the mods I got as a gift , do I keep that in the cook chamber during the seasoning

I would put Pam on outside instead of wd40. I spray the outside of mine down with food grade mineral oil off of Amazon. I wipe the outside down cold with rag full of mineral oil.
 
I did get 4 cans of pam to spray outside of firebox As it is cooling to prevent rust.
 
That is alot of Pam! I maybe use 1 can of food spray every 2 months with cleaning and re-spraying etc the interior, and every grate.
 
I'd second Flatbroke's advice.

And I would forgo the water pan for now at least. You want to season the metal, not steam it. ;)
Filling the surface pores with a baked on/in finish. It helps any other do-dah not stick.

I'd agree Tom. But I don't think he meant use 4 whole cans.
I think 4 cans would be running off the patio.... :eek:
Sorry. It was a bit misleading. I got 4 cans on amazon prime day. I am going to use one gingerly to spray outside of firebox after each cook. The mineral oil seems to go on better cold. Pam will be good for hinges and other moving parts since it is partcanola oil (I think) and will continue to season the metal where paint flakes due to heat.
 
To the OP.. I would first burn it out with a good hot fire for an hour or two( no pam/oil at this time)... This to burn of all the manufacturing oils... then spray/wipe down the whole smoker inside/out with the Pam.... BY NO MEANS do you wanna use w/d 40 on the outside ... and let it season (at cooking temps) for a couple more hours ...
 
Yep I spray Pam everywhere on my Lang inside & out, every time I use it. No rust anywhere yet!
And it doesn't seem to attract any bugs.

4 hours in & the temps have been pretty consistent
Started with a full chimney & 2 logs about 6 x 3 of oak, I left the vents open to push the temp just north of 300* about an hour & a half I threw another small log on & the temps stayed between 250 & 285
I added a shelf but it's a little long & I couldn't put the elbo in to bring the chimney down to grate level, so that's the coolest temp of the 4 probes I'm using. The anolog therms are way off compared to the Tenergy, the one that came with the OK Joe Highland is in line with the ones I got from BBQ Smoker Mods.com, but so far so good, no paint blistering so far

Sounds like everything is going according to your plan. Enjoy your new smoker. I couldn’t be happier with mine.
