drying further won't correct it.
Can you cook it ? I did that once with a Umai chub that case hardened and wouldn't dry . If the flavor is good and you consider it safe at this point cook it at 200 until it reaches 152 ish .

That is the plan Chop. I have some recipes I can use it in...top of the list is tortellini.....as well as pizzas and calzones.
