Hi everyone, my name is Bryan. I have been lurking behind the scenes here for some time and finally decided to join. I love the information that you can get here and the fact that I will be surrounded by BBQ enthusiasts. After years of thinking about it, I will be opening a new restaurant and bar here in Ventura IA. I have smoked meat on my Weber (I bought the conversion kit years ago), a Smokey Mountain gas grill, and now I have a MES 40. I am looking at getting something like a Southern Pride SBK 500. Any advice on what to buy or where to buy it would be appreciated. I don't want to have to spend 20 large on a smoker if I can avoid it.
