Finally got the pork butts done

So, still learning how to smoke on my off set I recently got. Have posted a couple times on here when I cured it and and when I did a chicken. I did the butts last weekend but finally getting around to post.

I know people said with the OK Joe Highlander the firebox paint usually peels quickly. I got through 3 fires before it did. Time to sand and repaint

Looks great to me. Nice color on that pork. What kind of wood did you go with? I've been using oak lately and my bark seems lacking.

I went with hickory. I did a a lot of smoking on my old Weber Kettle and I have always been partial to hickory on pork. Although I know my dad does a hickory/oak combo that works well also

I did get good bark with hickory and sometimes would blend with cherry. Just haven't had hickory for sometime so was going oak solo. Good to know, thank you.

This was just hickory, thinking it must burn hotter. I was too ashamed to take a pic of the oak ones.
