Fermenting Olives

Don't we all? Seemed like my grandmother could make something absolutely great out of anything. I don't think she ever tried olives, though. Hard to come by raw ones on the Oregon coast.
My father's family owned a small olive grove/farm in Greece. He died when I was 10 years old and I never got a chance to discuss it with him. My mom did make trips to Greece to check up on it and would bring back olive oil made from the olives. That stuff was great!
 
I remember this thread now, very cool.
The olives my family cured most often were not fermented, some were, but most were cured in pails of salt rock.
I need to call my aunt, I'm sure she remembers exactly how they did it.
I'm tempted to hire a couple of day workers to pick them for me. My back doesn't handle stuff like that very well anymore. I'm stubborn though, so you never know, I might pick them by myself, just to remember how much I hated picking them as a kid, and because I'm cheap. :emoji_laughing:

But how cheap are you? My neighbor's gave me some good natured crap when they saw me back the truck out of the garage into a heavy downpour for a free car wash LOL.

Yup, I'm that cheap as well.
My car wash is I drive my truck up to the local rock quarry when they are closed, and drive it under their overhead sprinkles that they use to wet the trucks down to keep the dust down.
