I was just at my local Costco here in DesMoines Iowa trying to pick out my first Brisket when the friend I was with noticed the gentleman next to us had 2 in his cart. We asked him if he was going to smoke them, which he was, and then asked him how he picked his out. He gave me some great tips that now seem like common sense but I had not thought of: even thickness of meat and make sure the fat cap is fairly thick and covers the whole piece of meat and a few other cooking tips. He even went so far as to tell me a bit of his rub recipe which I thought was awesome. I just wanted to post this up in case he happens to be a member and thank him. A nice guy who took time out of his day to explain some simple tips to a novice.
