Fatty dilemma

Saturday, we're heading out to the Royals game, and going to do some tailgating.  I've been asked to bring some fatties, which I was all gung ho about...and then I came across a problem...the game is at noon.  We will be getting there at 8.  This means I'm going to need to get up around 3:30 to make sure these guys get done in time.  I'm not trying to do that.

So, the question...how would you go about pre cooking them, and then reheating them without them drying out.  My plan would be to do them Friday night, and then stick them in the fridge and go to bed.  We will have a grill out there, but obviously that would take longer than we'll have to get it hot.

Personally I've done them this way for hunting season. I slice them and then lay them on the top rack of the grill to heat them up. I haven't had a problem with them drying out that way.
just foil the grill if ya have ingrediants that will melt and run.
 
I cook the fattie and stick it in the fridge to cool. The next day I will slice it up and wrap each piece in a foil wrap and just throw them on the grill or on a fire to reheat.

I have grilled them or done them on a flat top to reheat them. You will be fine.
