Howdy Folks!

It's Father's Day weekend and I'm able to do something enjoyable. I'm smoking 3 pork shoulders and a beef shoulder. (This post is in the pork forum because the pork outweighs the beef by about 3 to 1! LOL)

I have an 8 pounder along with 4.8 and 5.2 pound shoulders and the beef weighs in at 5.5 pounds. I rubbed them last evening with my rub and they hit the smoker at 6:00 AM. The pork will be pulled, freezer bagged and tagged and frozen to re-heat the day of the picnic. I'm planning to consume the beef today and tomorrow.

I agreed to provide pulled pork, wicked beans, and slaw (regular and BBQ) for the end of the year staff picnic at school. It's potluck style for everyone else, and the list of foods is quite impressive. I'm going to be serving about 45 folks.

got em headin in the right direction, cant wait to see the final product. What I wanna see is the smiles on some of those folks faces, that is hands down the best!!!

Great looking roasts, Meowy! The temp gauge shot is cool, interesting to see how some of them are different temps than others, even though they were on there at the same time. Just goes to show that it's always the temp gauge to go by, not the watch!

I don't know. My friend Chef Cathy got a deal on a whole grass fed beef. I asked if when it was cut up, I could get a shoulder. I'm looking forward to trying it. If I like it, I may place a standing order with her for when she get's the chance to acquire more.

Looks great meowey! You're about 4 hours ahead of me, fixin to give the hour 4 spritz and take the hour 4 pix and stick in the therm. I never get the therms in till the 4th hour - just a waste of battery IMHO.
 
Good point!

I just seem to want to know what's happening with each piece of meat and can't help myself to not probe before I put them in the smoker. LOL at myself!
