I'm a fat side up and I cut a diamond pattern like Smokin gun did so that the smoke can get into the meat alittle better. It will also give you more places to caught the rub too.
 
I am a fat side down guy, and like the Dude I trim most of the cap first. I also agree with Dude about this: there's no wrong answer here, either way will work real good.
