First off sorry for the crappy pictures and lack there of.
Bought my camp chef flat top a couple weeks ago and have been using it like crazy. Decided to try my hand at fajitas on it.
Cut all the meat up and made the marinade the night before so it would have time to soak up some of this goodness. Big shout out to
chilerelleno
for the fajita marinade. If you guys haven't tried it it is amazing and I highly recommend!
Sirloin strip steak and chicken breasts cut up and ready to go along with some peppers and onions.
Heated the flat top up. Still don't have a hard cover so its in the garage.
Now I did this a little differently. I wanted everything to kind of cook to a different doneness so I did them all separately. The right side of the griddle was off and still above 250 so started with the peppers and onions.

Threw the chicken on first
I wanted the steak to still have some red to it so put it on last
Took half the steak/chicken and threw it back on with the peppers and onions for just a minute(kids don't like peppers/onions) and forgot to get a picture
Toasted up some corn tortillas
Whipped up two kinds of homemade salsa(mild and burn your ass off hot) and pulled those out
Got some refried beans, cotija cheese, and Mexican rice. Managed to get a picture of one of the kids plates which doesn't do it justice.
Holy crap these were good. I know the pictures suck and you cant really tell but I have never had fajitas this good. So much better than using the cheapo seasoning packets or the crap meat you get from the Mexican restaurants. Try out Chili's marinade if you haven't. My garage still smells like fajitas. Plan to do again in the near future and will get better pics of the whole process. Thanks for looking!
