Today's early dinner so the kid could head back to college. I had a little left over chuck from the other night so i did sort of burnt ends with it. I also seasoned a small 3lb eye round with SPOG and let it ride unwrapped to 140 (should have been more like 130). Then wrapped for a short rest while i worked on the other dinner fixings.Then i sliced it and seared it on the flat griddle for a about a minute on each side. served It up with potatoes/corn and cottage cheese and it was pretty good.

It was 45 degrees with 15-20 MPH winds and the old CC purred like a kitten on high smoke the whole time.
