The wife had to go to the office today, I was at home with three kids "distance learning". Today is my Friday off so decided to cook up a classic with a twist. Mixed cream cheese (8oz) with seedless strawberry jelly (2 TBL), granulated garlic, onion powder, and cayenne to taste. Pitted the jalapeno's and stuffed.

Did the other half just cream chees and granulated garlic.

Wrapped those badboys in mild pork sausage and hit them with my pork rub.

Wrapped 6 in bacon so we all got ONE with bacon since I don't own a defibrillator.

Smoked in the vertical chamber at 205ish for 2.5hrs with oak and cherry wood until they read 170 IT.

I really can't complain about how they came off. Did lower and slower than before. Sausage smoked all the way to the pepper. I was suspect of the bacon but it was perfect. Bite through, no tare, and with some crispness. Thanks for checking out.

Was a bit confused by the strawberry jelly, but damn they look great! Sweet and savory it is!

Thank you. When I thought of it, it seemed like a great idea. When I made it, I questioned myself - that's why I did the other half without. When I tasted it, it actually worked well. It was just a very mild sweetness that complimented the jalapeno and sausage.
 
Man that all sounds and looks amazing. Makes me wish I had some right now haha

Thank you all for the kind words and likes. Hopefully I'll bring some more diferent cooks with "recipes" going forward. Experimented with some things today which I hope to bring here in the near future.

I've heard them called Armadillo Eggs. No matter what they are called, they sound good to me...JJ
