The wife had to go to the office today, I was at home with three kids "distance learning". Today is my Friday off so decided to cook up a classic with a twist. Mixed cream cheese (8oz) with seedless strawberry jelly (2 TBL), granulated garlic, onion powder, and cayenne to taste. Pitted the jalapeno's and stuffed.
Did the other half just cream chees and granulated garlic.
Wrapped those badboys in mild pork sausage and hit them with my pork rub.
Wrapped 6 in bacon so we all got ONE with bacon since I don't own a defibrillator.
Smoked in the vertical chamber at 205ish for 2.5hrs with oak and cherry wood until they read 170 IT.
I really can't complain about how they came off. Did lower and slower than before. Sausage smoked all the way to the pepper. I was suspect of the bacon but it was perfect. Bite through, no tare, and with some crispness. Thanks for checking out.
