Entire chicken pot pie on ECB

It's going to be in the low to mid 30s tomorrow. I plan on making a pot pie from start to finish , from scratch, on the ECB .
This aught to be a challenge.. Smoking half a chicken to start.. removing meat from the bone and cutting it up.
Cooking onion and some raw vegetables including potatoes in a cast iron skillet on the ECB.. Then making a roux and adding chicken stock and milk for a sauce.
Dumping the mix and sauce into a Pyrex pie dish with a crust and topping with a second crust.
Baking the pot pie for about 30 to 45 minutes on the ECB at 400°. I have frozen corn and peas.
Fresh carrots and onion, mushrooms...
Some celery and fresh potatoes all to put in the sauce of flour and butter... milk and stock.. This should be a day .. I think thyme and garlic should be in there.. salt,pepper.. Has this been done? ECB or 30° temps? Should be a challenge..
 
We do pot and shepherds pie all the time in the smoker, Dutch ovens, but never in an ECB.

Should be good. Waiting for pictures.
 
Sounds good,hopefully weather/wind cooperates.Surprised you're not using CI....
We're scheduled for 18* tonight and 39* tomorrow here.Sunday is smoke day...48* and light wind.

Baked half of a chicken yesterday and am using the fat and drippings for the pot pie today.
I cut up the carrots
The celery and leaves
The onion and garlic.
Mushrooms
I have a potato that will get diced and boiled a few minutes to add in there.
I'm using some corn and peas frozen too.
I have some chicken stock to make a sauce with flour and butter ..

Forgot milk to go in the sauce also.. ;)That will all get dumped in the pie crusts.. Hope it gets Baked on the top rack at 400 with just a bit of smoke..

Took the skin off and bones out of most of it..
The tenderloins are on there also.
