Emergency Rib smoke!

My wife (she who must be consulted for major BBQ purchases), casually dropped "Oh honey, when I get off work today, can you have ribs on the table?".  She then walked promptly out the door at 6 A.M.

I am normally a "Make up a fresh batch of rub, Rub, refrigerate the ribs overnight, then cook" kind of smoker.  But the short time line did not allow it. 

What did I do?  Started getting the smoker up to temperature.  I raced out to Safeway, bought some of their pre-rubbed/marinated ribs, cut them down to fit the rack in the mini. Then I loaded the rib rack with the half-racks after the mini-WSM was up to temperature.  Hickory chunks were added after the mini got up to temperature.

I normally rub my own ribs, and was somewhat disappointed they didn't remove the thin sheet of membrane before they packed them.  Thankfully, I had some of my rub left over, and that allowed me to recoat the meat after the membrane was removed.

The race is on...


 
SWMBO has spoken, and you responded perfectly, adapting to the instant challenge.  I don't know what it is about your wife and mine walking out the door and hitting us with "Oh, BTW, I want, need, yada yada yada."  To keep the her smiling, yada yada yada is a small price to pay.  In your case you get to eat the yada, yada, yada!   
 
I have a theory.  They do it going out the door because they know they can say they don't have time to listen to reasons why you can't deliver.

Such as:

Well honey,  I would have to have put on the rub last night. 

My smoker is dirty, and needs cleaned first. 

I am out of (ingredient). 

I am out of (charcoal, wood chunks).

The sun is in my eyes.

My wife comes up with these short order requests all the time too.  I've given up on changing it so I fight fire with fire and just smoke what I want....yeah right. That's a nice pipe dream anyway.

I agree with you that they do it so that we don't have time to argue, err.., discuss it with them.

In 17 years of us being together I've yet to understand how the woman who has to plan vacation itineraries down the minute will drop a request for something that takes 8-12 hours when you have 10 hours until it needs to be done.

My wife did this to me Saturday! She invited two English soccer coaches over for dinner on Sunday to privately train my two younger daughters and then eat at my house. The problem? I have to work on Sunday! So, I marinate a bunch of chicken thighs and breast in teriyaki sauce overnight and somehow get them smoked the next AM. It turned out awesome!!! I also had some smoked ribs in the freezer. When I got home from work there wasn't any chicken or ribs leftover for me...
