Nothing like field to table wild game that tastes amazing!
BTW, I love the bulk spices on the shelves behind the meat there. I wish I had room to get the big 4 (Salt, Pepper, Onion, Garlic) and Paprika in bulk. I DO have cracked Black Pepper in one of those big containers and Bay Leaves of all things in one of those big containers.

I use the bay leafs in my instant pot black soy beans a la chara... which I need to get back onto making :)

Anyhow, great job!
 
Finished grinding the burger and I ended up with 60 plus pounds plus I made 20 pounds breakfast sausage !! Steaked out the hind quarters and made 16 pints of canned elk to go with the loins and the neck is simmering while I text . Nice to have a full freezer with the cost of food nowadays .

Yup. Got (5) 100-130# deer in the freezer now...185# of meat. A large part of that will be ground meat when processing day rolls around Feb. 2023. Just need a couple wild hogs and the freezers will be full again....

How many pounds of meat total did you get off that big spike elk?
 
I didn't weigh it but I would say somewhere around 250 pounds . Shot behind the 5th rib and that bedded him down and finished him with one behind the head, He wasn't really gut shot and there was zero loss of meat . I am 6'-05" and 270 still pretty strong and I had a hell of a time picking up the hind quarters.
 
That is awesome!! I love elk. My brother in law is an avid hunter and has given me some from time to time.

one of my dream hunts. along with moose, bison, and caribou. All out of my price range so I will continue to dream. Tough to smoke a dream though lol.
