Corned beef

After an eight day swim, it was ready to cook.
3 1/2 hr. of cooking/simmering very slowly
Put in fridge for a couple of hours and it was ready to slice.
It should made very nice sandwiches. Tasted really good ( well I had to sample it didn’t I?)

Looks good from here. It's strange but in this neck of the woods corned beef in a cryopac is about half the price of an uncured brisket flat.
