Not enough room or equipment down here to make a turkey grind trial. I want to cure it to hopefully disguise the turkey flavor.

THAT'S ONE HELL OF A COOK WITH A GREAT WRITEUP RICH, NICE WORK! I'VE READ THRU THREE TIMES NOW, HAVE EVERYTHING NEEDED TO PULL THIS OFF, I'M A LITTLE CONCERNED ABOUT THE FLIP. MY 12" CI SKILLET IS A BEAST, WEIGHS ABOUT EIGHT POUNDS WITH HANDLES ON BOTH ENDS, NOT SOMETHING THAT'S EASY TO DEAL WITH WHEN HOT. IT'S FOUR IN THE MORNING AND I'M HUNGRY, NEED TO PUT ON THE THINKING CAP TO TRY THIS OUT. BTW, GRATS ON THE CAROUSEL RIDE RICH, WELL DESERVED!

Thanks for the comments . It's a good method , but a bit of a challenge . Could use a smaller tortilla , or cut one to fit the size pan you want . A good non stick pan would be ideal .

My opinion is there's not much flavor to the turkey grind . I did it as bulk , so I did not use the skin . Flavor comes from the spice mix , and the dish it's used in for me .

When I make chicken sausage , I do grind the skin and only use the dark meat .
Turkey can be pretty thick , and I didn't want it to show up in the dish , since it was bulk .
