Egg Burrito , Good way to start a cold day .

Looks good. I need to give that a try.
Not enough room or equipment down here to make a turkey grind trial. I want to cure it to hopefully disguise the turkey flavor.
 
Heck yeah. If I had time in the mornings i would make one every morning
 
That looks phenomenal Rich!! I plan on making some bulk chicken breakfast sausage and chorizo soon.
 
THAT'S ONE HELL OF A COOK WITH A GREAT WRITEUP RICH, NICE WORK! I'VE READ THRU THREE TIMES NOW, HAVE EVERYTHING NEEDED TO PULL THIS OFF, I'M A LITTLE CONCERNED ABOUT THE FLIP. MY 12" CI SKILLET IS A BEAST, WEIGHS ABOUT EIGHT POUNDS WITH HANDLES ON BOTH ENDS, NOT SOMETHING THAT'S EASY TO DEAL WITH WHEN HOT. IT'S FOUR IN THE MORNING AND I'M HUNGRY, NEED TO PUT ON THE THINKING CAP TO TRY THIS OUT. BTW, GRATS ON THE CAROUSEL RIDE RICH, WELL DESERVED!
 
Now that looks mighty tasty my friend. Really like the approach here and the subbed chorizo would have hit the spot for me. Also, really like the Lodge. Nice job Rich and Congrats on a well deserved spinner ride.

Love all whole process and the final shot , perfect.. I would love one of those.

I almost always add water instead of milk to my scrambled eggs, I find it fluffs up a little more also.

Thanks for the comments . It's a good method , but a bit of a challenge . Could use a smaller tortilla , or cut one to fit the size pan you want . A good non stick pan would be ideal .

My opinion is there's not much flavor to the turkey grind . I did it as bulk , so I did not use the skin . Flavor comes from the spice mix , and the dish it's used in for me .

When I make chicken sausage , I do grind the skin and only use the dark meat .
Turkey can be pretty thick , and I didn't want it to show up in the dish , since it was bulk .
 
Well I was talking to my buddy Ray @sawhorseray this morning , and he mention a breakfast burrito .
So I was telling him about one I saw on the net that I did awhile back . Trying to remember exactly how it went , I figured I'd just go in for a second round .

This is a bit different , as the tortilla is cooked on top of the eggs , the tri folded when done .
Gives it a better texture for me .
Anyway ,
3 eggs scrambled in the pan . I put 3 TBL of butter in first , so the eggs would release .
Then added some homemade turkey Chorizo I used for tacos . Bought a whole turkey for 99 cents a pound and ground it up . Taste the same , if not better than $6.00 a pound ground beef when used like this .
1940 Lodge No. 8 skillet . Passed done from my Dad's side . Been feeding my family for a lot of years .
BTW , I always add water to my scrambled eggs . It's a protein structure thing ,
plus the steam gives a soft fluffy interior .

Had a burrito sized tortilla . Had to trim about 5/8's around the outside so it would fit .
That goes on top of the raw egg mix .

Takes awhile , but you just have to wait for the eggs to
completely set . You can tip the pan , and lift the eggs to
get liquid to run underneath . Just be patient .

Then flip it over . Takes some doing , but if the eggs are set
it will work out .
Tortilla down .
Continue cooking to set the rest of the egg mixture .

The first one I did was just eggs to start . The chorizo added some grease
to the pan which was OK , but it was a bit loose .

After the bottom sets , and tortilla crisps up , I add some cheese .
It should be in the middle , but figured it would push over when folded .

First fold goes to the middle .

Then add more cheese on top of the fold , and fold the other half
on top of the first fold .
No pic , not enough hands .
Hold it down with my press .

When it holds together , I flip it again . The folds / seem are down .

There's something about this that is way better than a tortilla wrapped around
a bunch of filling . Simple . Not a bunch of fancy adds . Meat . cheese and eggs .
Didn't even need hot sauce for me , because that Chorizo really shines .

The tri fold gives it a different feel over just rolled up . Both ways good though .
This can be a bit of a challenge to flip . Just make sure the eggs are set on the bottom .
I use a spatula , but you could slide it onto a plate , then flip and slide it back in .
Just needs to big big enough to get the triple fold .
Let use know how it goes .

By weird coincidence I saw an article this AM written about a famous joint in Denver that is known for these and they showed a pic of it and it was seared HARD and smothered in green chili sauce. My jaw hit the floor!

I wish I could fund the original video . I can't remember if it was eggs on the bottom of the pan , or tortilla in first , and eggs on top .
I know it was folded twice , making 3 layers . I call that tri folded .
I just looked and found 2 that were tortilla first , eggs cooked on top . One was flipped twice , one was just rolled up after the eggs were cooked .
I'm pretty sure the one I based this on was eggs first , tortilla on top , flipped and folded .

Green chili and knife and fork would be good for sure .
