Couldn’t say for sure I have only made it with pork but I don’t see why not as long as u get plenty of joints to get the jell. Isn’t much meat on a beef shank is there? U could do a tongue with it to chop up & mix in. Be like pickled tongue in a loaf.
could add gelatin 1/2 cup for 5 pounds
 
Darn! My mouth is just watering looking at this. I love white vinegar and onions with rye bread big glass of vodka, mabey a beer. Man oh man I wish I had a pan full.

Same here. Dad called head cheese head cheese and said some people call it souse.

Looks like this was made like head cheese but using other parts.

I remember buying head cheese in the butcher shop. Times have changed.

It's hard to find good head cheese these days. :)
